Ingredients

1 cup mascarpone cheese
1 egg yolk
1 egg ( beaten with 1 tablespoon water )
1/4 cup sugar
2 tablespoons all-purpose flour , plus extra for rolling out dough
1/2 teaspoon vanilla extract
1 sheet frozen puff pastry , thawed
6 ounces fruit preserves ( cherry or strawberry )
This Puff Pastry Cheese and Preserve Danish is the perfect indulgent breakfast or brunch item. Instructions

1.Preheat the oven to 400°F.
2.In a medium bowl, whisk together the mascarpone cheese, egg yolk, sugar, flour, and vanilla extract until smooth.
3.On a lightly floured surface, roll out the puff pastry sheet to 1/4 inch thickness.
4.Cut the pastry into 6 equal squares.
5.Spread a generous spoonful of fruit preserves onto each pastry square.
6.Spoon the mascarpone mixture over the preserves.
7.Fold the corners of each pastry square towards the center and press lightly to seal.
