Puerto Rican Coquito is a traditional holiday cocktail that is typically served during Christmas and New Year's Eve celebrations. The drink is similar to eggnog, but instead of using eggs and milk, the coquito uses coconut milk, cream of coconut, and evaporated milk, along with rum and other flavorings like cinnamon. The coquito is often served with dessert or as a sweet treat after a meal.

Instructions

1.Crack open the coconut and drain the water into a large pitcher. Reserve the flesh for later.
2.Add the rum, coconut milk, cream of coconut, evaporated milk, and cinnamon sticks to the pitcher.
3.Blend the coconut flesh in a blender with 1 cup of water until smooth. Strain the coconut cream into the pitcher and discard any remaining solids.
4.Add the sweetened condensed milk and stir well to combine.
5.Chill the coquito in the refrigerator for at least 2 hours or until ready to serve.
6.To serve, pour the coquito over ice and garnish with cinnamon sticks, if desired.
