2 1/2 lbs chicken pieces

1 teaspoon capers
1 tablespoon vinegar
1/4 cup raisins
8 black raisins
1/2 cup tomato sauce
2 tablespoons achiote oil
1 lb potato , peeled and cut into pieces
14 ounces peas , Petite Pois
2 1/2 cups water
2 tablespoons butter

Instructions

2.In the same pot, add bacon and cooking ham, cook until browned, then add onion to the pot. Cook for 2-3 minutes until onion is softened.
3.Add tomato sauce, garlic, peppers, oregano, bay leaves, cilantro, capers, raisins, black olives, vinegar, and salt to the pot. Stir to combine all ingredients, reduce heat to low, and cook for 5 minutes.
4.Add chicken and any accumulated juices back to the pot. Add potatoes, peas, and water. Bring to a boil, then reduce heat to low, cover, and let simmer for 45-50 minutes.
5.Remove bay leaves and cilantro sprigs before serving. Enjoy over white rice.
