Ingredients

2 lbs boneless pork , cut into 1 inch pieces
3 tablespoons flour
2 2 tablespoons lard or 2 tablespoons bacon drippings
1 cup chopped onion
2 cloves garlic , minced
3 cups chopped peeled tomatoes ( canned or fresh )
1 teaspoon salt
1/2 teaspoon Mexican oregano
1/4 teaspoon ground cumin
20 fresh green chilies , parched , peeled and chopped

Instructions

1.Heat the lard/drippings in a Dutch oven over medium-high heat.
2.Coat the pork cubes with flour and brown them in the hot lard/drippings.
3.Add onions and garlic then saute until onions are tender.
4.Add tomatoes, salt, oregano, cumin and 1 1/2 cups of water, then bring to a boil.
5.Reduce heat and simmer until pork is tender, around 1 1/2 hours.
6.Add green chilies and continue to simmer for another 30 minutes. Serve hot.
