Ingredients

1 teaspoon cooking oil
1 1/2 cups fresh mint leaves
2 teaspoons cooking oil
6 dried red chile peppers
1 tablespoon skinned split black lentils ( urad dal )
1 tablespoon coriander seed
1 teaspoon chana dal beans
1 teaspoon mustard seed
1 teaspoon tamarind paste
salt to taste
Pudina (Mint) Pacchadi is an Indian chutney with a refreshing flavor. With fresh mint leaves and a blend of Indian spices, this condiment is enjoyed all across South India. Instructions

1.Heat 1 tsp cooking oil in a pan and add fresh mint leaves. Saute until they wilt.
2.In a separate pan, heat 2 tsp cooking oil. Add dried red chile peppers, skinned split black lentils, coriander seed, chana dal beans, and mustard seed. Roast until golden brown.
3.Grind the roasted spice mix along with tamarind paste, salt, and sautéed mint leaves to a fine paste.

CONS

The chutney can be too spicy for some, in that case, deseed the red chillis.
Also, it has a short shelf life so should be consumed fresh.
