Ingredients

6 cups water
1 stalk celery , cut into 8 pieces
1/2 cup chopped parsley
1 onion , quartered
3 lbs whole fish , cleaned ( cod or flounder )
1 tablespoon minced mint leaf
1/2 cup minced onion
2 eggs
1 cup breadcrumbs
1/3 cup grated kefalotori cheese
salt and pepper
3/4 cup water
1 cup all-purpose flour , for coating
oil ( for frying )
6 tablespoons fresh lemon juice
rosemary , sauce
Psarokeftedes are a traditional Greek dish that originated on the island of Crete. Made with fresh fish, herbs and spices, these patties are a popular menu item at tavernas and restaurants throughout Greece. Instructions

1.In a large pot, combine water, celery, parsley and onion.
2.Bring mixture to a boil and add fish, mint and onion.
3.Cook fish until it flakes easily then remove from heat and drain.
4.In a large bowl, flake the fish and combine with eggs, breadcrumbs, kefalotori cheese, salt and pepper.
5.Mix until well combined and form patties.
6.Coat each patty with flour and fry in oil until golden brown.
7.In a small saucepan, heat lemon juice and rosemary until it simmers.
8.Serve the fish patties with the warm rosemary sauce.
