Ingredients

1/2 - 3/4 lb almonds
2 lbs prunes , pitted
4 cups red wine or 4 cups ruby port
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
Prunes stuffed with almonds are a traditional Portuguese dessert called 'Road of Love' usually served in the Christmas. This simple and easy dessert is a true delicacy with its rich and decadent taste. The juicy and chewy prunes with crunchy almonds make it an irresistible dessert that will become a household favorite

Instructions

1.Preheat the oven at 400F
2.In a bowl, soak the pitted prunes in red wine for a minimum of 2 hours
3.Drain the prunes and reserve the wine. Cut the stalk end of the prunes off and using a small knife, make a hole in the centre of the bigger end
4.Toast almonds in a preheated oven, spread on a baking tray for about 10 minutes
5.Cool almonds and stuff one almond in each prune using a toothpick to close the hole
6.Heat the reserved wine with nutmeg, cinnamon, and ginger in a saucepan
7.Put the stuffed prunes in a baking dish and pour 1/2 cup of wine syrup over the top
8.Bake for 15 minutes. Check and bake for another 10 to 15 minutes.
9.Serve hot with whipped cream or vanilla ice-cream.
