Ingredients

2 lbs red potatoes ( about 2-inch in diameter each )
6 cups water
2 tablespoons salt
1 garlic clove , peeled
1 1/2 tablespoons white wine vinegar
2 teaspoons Dijon mustard
black pepper
1 small shallot , minced
1 tablespoon minced fresh chervil
1 tablespoon minced fresh Italian parsley
1 tablespoon minced fresh chives
1 tablespoon minced fresh tarragon

Instructions

1.Place the potatoes in a large pot with 6 cups of water and 2 tablespoons of salt. Bring to a boil over high heat and reduce the heat to medium-low. Simmer the potatoes for 15-20 minutes, or until tender.
2.Drain the potatoes and cut them into quarters.
3.In a small bowl, whisk together the garlic, white wine vinegar, Dijon mustard, black pepper, and shallot.
4.In a large bowl, combine the warm potatoes with the vinaigrette. Toss well to coat.
5.Add the chervil, parsley, chives, and tarragon to the bowl. Toss again to combine.
6.Season with additional salt and black pepper to taste.
