Ingredients

1 1/2 cups fresh broad beans , shelled or 3/4 cup dried haricot beans , soaked overnight
1/2 teaspoon dried herbes de provence
2 garlic cloves , finely chopped
1 tablespoon olive oil
1 onion , finely chopped
1 large leek , finely sliced ( or 2 small )
1 celery rib , finely sliced
2 carrots , finely diced
2 small potatoes , finely diced
4 ounces French beans
5 cups water
1 cup shelled garden peas ( fresh or frozen )
2 small courgettes , finely chopped
3 medium tomatoes , peeled , seeded and finely chopped
handful spinach leaves , cut into thin ribbbons
salt & freshly ground black pepper , as needed
1 sprig fresh basil , to garnish
1 -2 garlic clove , finely chopped
1/2 cup basil leaves , packed
4 tablespoons parmesan cheese , grated
4 tablespoons extra virgin olive oil
Provencal Vegetable Soup is a classic dish from Southern France, inspired by the bright flavors and ingredients of the region. Instructions

1.If using dried haricot beans, drain them after soaking overnight. Add the beans to a large pot with 5 cups of water and a half teaspoon of dried herbes de provence. Bring to a boil, reduce to a simmer and cook for 45 minutes until tender. If using fresh broad beans, skip this step.
2.In a separate pot, heat olive oil over medium heat. Add garlic, onions and leeks. Saute for 5 minutes until onions become translucent.
3.Add celery, carrots and potatoes. Saute for another 10 minutes until the vegetables start to soften.
4.Add the French beans and 5 cups of water. Cover and bring to a simmer for 15-20 minutes until the vegetables are tender.
5.Add peas, courgettes, tomatoes and spinach leaves. Cook for another 5 minutes until heated through.
6.Season with salt and pepper to taste. Serve with freshly grated parmesan cheese and a sprig of basil for garnish if desired.
