Ingredients

1 1/2 lbs eggplants
1 lb zucchini
1 lb bell pepper ( red , green and yellow )
1 1/2 lbs tomatoes
4 garlic cloves
3 white onions
1 bouquet garni ( a tied bundle of thyme sprigs , bay leaf and parsley stems )
1 cup olive oil
salt & pepper

Instructions

1.Peel the eggplants partially to leave strips of the skin and cut into hand-size pieces.
2.Slice the zucchinis and peppers.
3.Peel and chop onions and garlic.
4.Cut the tomatoes into pieces, setting aside their juice and seeds.
5.Heat the olive oil in a casserole.
6.Add some onions and garlic, then add a layer of zucchini. Season with salt and pepper.
7.Add a layer of eggplant, bell peppers, and tomatoes on top of the zucchini. Season with salt and pepper.
8.Add another layer of onions, garlic, and bouquet garni on top.
9.Repeat the layering process until all the vegetables have been added.
10.Cover the casserole and cook for 45 minutes on low heat.
11.Remove the bouquet garni before serving.
