Ingredients

4 lbs leg of lamb ( boned weight )
salt and pepper
string
1/2 tablespoon olive oil
1/2 large onion , finely chopped
2 3/4 ounces walnut pieces
2 1/4 ounces breadcrumbs
5 1/2 ounces goat 's cheese
8 fresh figs , quartered
3 sprigs thyme , leaves only
1 egg , beaten

Instructions

1.Preheat the oven to 180 degrees Celsius
2.Lay the lamb flat, skin side down, on a large board. Season generously with salt and pepper
3.Heat the olive oil in a large frying pan over medium heat. Add the onion, and cook for 5 minutes, until soft
4.Add the walnut pieces, breadcrumbs and goat's cheese to the pan, mix together and cook for a further 2 minutes
5.Place the figs on top of the lamb, followed by the cheese mixture. Sprinkle the thyme leaves over the top, and roll the lamb up like a Swiss roll. Use string to secure it closed
6.Transfer the lamb to a roasting tin and brush with the beaten egg
7.Roast the lamb in the oven for 1 1/2 hours, or until the internal temperature reads 63 degrees Celsius for medium-rare, or 71 degrees Celsius for medium
8.Allow the lamb to rest for 20 minutes before carving. Serve with roasted vegetables or a mixed salad
