Ingredients

400 g kipfler potatoes , halved lengthways
200 g lamb backstraps
1 garlic clove , sliced finely
2 slices prosciutto
150 g green beans , trimmed
1 ruby red grapefruit , segmented
1/4 cup flat leaf parsley , chopped
30 g reduced-fat feta , crumbled
Prosciutto Lamb & Roast Kipflers is a hearty main dish that's perfect for dinner. Created as part of the 21 Day Wonder Diet, this dish packs a punch of flavor with the saltiness of the prosciutto and the zestiness of the grapefruit. Instructions

1.Preheat oven to 200C. Line a baking tray with baking paper.
2.Place potatoes on the prepared tray. Spray with oil and season with pepper. Roast for 45 minutes.
3.Wrap each lamb backstrap with a slice of prosciutto. Heat a non-stick frying pan over medium heat. Cook lamb for 3-4 minutes each side (for medium-rare) or until cooked to your liking.
4.Steam the green beans for 2-3 minutes until bright green and just tender. Refresh in iced water then drain.
5.Combine the grapefruit segments, green beans and parsley in a bowl. Season with pepper and toss gently.
6.Divide the roast potatoes and the grapefruit salad between 2 serving plates. Top with feta and lamb backstraps.
