8 flour tortillas

Instructions

1.Preheat oven to 350°F.
2.Mix chicken, 1 cup of Monterey Jack cheese, and sour cream in a bowl.
3.Place 1/3 cup chicken mixture down the center of each tortilla. Roll up and place seam side down in an 11x7-inch glass baking dish.
4.Pour remaining chicken mixture over tortillas, top with remaining 1 cup cheese.
5.Bake for 20 to 25 minutes or until cheese is melted and mixture is heated through.
6.Let it cool for a few minutes.
7.Top with chopped green onions and chopped tomatoes if desired before serving.
