Chocolate Crust :

1/4 teaspoon salt
1/3 cup shortening , chilled
3 tablespoons milk
1/2 teaspoon vanilla extract
1 drop red food coloring ( optional )
1/4 cup finely chopped pecans
Lemon Filling :
3 tablespoons cornstarch
1/2 teaspoon salt
1 cup white sugar
3/4 cup boiling water
3 egg yolks , beaten
1 tablespoon unflavored gelatin
1/4 cup cold water
2 tablespoons butter , room temperature
2 tablespoons lemon zest
6 tablespoons fresh lemon juice
3 egg whites
3 tablespoons white sugar
1 cup heavy cream , chilled
1/4 cup shaved sweet chocolate
This pie won first place at the county fair and has been a favorite in our family for generations. The chocolate crust adds a unique twist to the classic lemon pie, and the shaved sweet chocolate on top adds a touch of decadence. Instructions

1.Preheat oven to 350 degrees F.
2.In a medium bowl, whisk together flour, cocoa mix, and salt.
3.Cut in the chilled shortening with a pastry blender or two knives until the mixture resembles coarse crumbs.
4.Add the milk, vanilla extract, and a drop of red food coloring if desired.
5.Mix with a fork or your hands until the dough holds together.
6.Press into a 9-inch pie dish and sprinkle with pecans.
7.Bake for 15 minutes or until the crust is set and slightly firm.
8.In a medium saucepan, whisk together cornstarch, salt, and white sugar.
9.Add boiling water and stir until completely dissolved.
10.Add beaten egg yolks and stir to combine.
11.Cook over medium heat, stirring constantly, until the mixture comes to a boil and thickens.
12.Remove from heat and add unflavored gelatin and cold water. Whisk until the gelatin is dissolved.
13.Stir in butter, lemon zest, and fresh lemon juice.
14.In a medium bowl, beat egg whites until stiff peaks form. Gradually add 3 tablespoons of white sugar, beating until glossy.
15.In a separate bowl, beat heavy cream until peaks form.
16.Fold egg whites and whipped cream into lemon filling until just combined.
17.Pour filling into pie crust.
18.Chill for 2-3 hours or until set.
19.Top with shaved sweet chocolate before serving.
