Ingredients

1/2 cup warm water
1 1/4 teaspoons active dry yeast
1/4 cup buttermilk
2 tablespoons golden brown sugar ( packed )
3/4 teaspoon sugar
1 1/2 teaspoons vegetable oil
2 cups bread flour
1 1/2 teaspoons salt
nonstick vegetable oil cooking spray
8 cups water
1/4 cup amber beer
1/4 cup baking soda
1/4 cup golden brown sugar ( packed )
3 tablespoons vegetable oil
1 -2 tablespoon pretzel salt or 1 -2 tablespoon coarse sea salt

Instructions

1.In a small bowl, dissolve yeast in warm water and let it sit for 5 minutes.
2.Combine buttermilk, golden brown sugar, sugar, oil, and bread flour in a large mixing bowl.
3.Add salt and yeast mixture; stir for a well-combined dough.
4.On a floured surface, knead the dough for 8 minutes until it becomes soft and elastic.
5.Coat a large bowl with nonstick vegetable oil cooking spray and place the dough in it. Cover and let it rise until doubled in size for about 1 hour.
6.Preheat oven to 425°F (218°C).
7.In a large pot, boil water, beer, baking soda, and golden brown sugar.
8.Divide dough into 8 pieces and roll into 8-10 inch ropes. Make knots and leave them aside.
9.Drop each knot into the boiling liquid for 30 seconds and take them out with a slotted spoon. Let them dry for 2 minutes.
10.Place knots on a baking sheet and brush with oil. Sprinkle salt on each knot.
11.Bake for 15-20 minutes until golden brown.
12.Let it cool on a wire rack before serving.
