Ingredients

3/4 cup dried great northern beans
3 1/4 cups water , divided
3 lbs lamb shanks ( about 2 large shanks )
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
2 teaspoons olive oil , divided
1/2 cup shallot , sliced
6 garlic cloves , sliced
1 cup dry red wine
1/4 cup sun-dried tomato
1 teaspoon dried rosemary
1 tablespoon Worcestershire sauce
1 can low sodium beef broth
2 tablespoons flat leaf parsley , chopped
5 cups egg noodles , hot cooked ( about 4 cups uncooked pasta )

Instructions

1.Rinse the beans in cold water and transfer to a pressure cooker.
2.Add 3 cups of water and pressure cook on high for 25 minutes.
3.Once done, remove and set aside.
4.Pat the lamb shanks dry with paper towels and season with flour, salt, and pepper.
5.In the same pressure cooker, heat 1 tablespoon of olive oil over medium-high heat and brown the lamb shanks, about 5 minutes per side.
6.Remove the shanks and set aside.
7.In the same pressure cooker, heat the remaining oil over medium heat and cook shallots and garlic until softened, about 3 minutes.
8.Stir in the red wine, sun-dried tomatoes, rosemary, Worcestershire sauce, beef broth, and remaining water.
9.Add the lamb shanks back into the pressure cooker and top with the cooked beans.
10.Close and seal the pressure cooker and cook on high for 45 minutes.
11.Once done, release the pressure and let rest for 5 minutes before opening the lid.
12.Serve hot with cooked egg noodles and garnish with chopped parsley.
