1 octopus , of about 2 lbs
2 lbs potatoes ( about 6 medium )
3 garlic cloves
1 bunch parsley
vinegar
olive oil
1 laurel bay leaf
1/2 tablespoon pepper , in korns
salt

Instructions

1.Clean the octopus and cut it into pieces. Peel the potatoes and cut them into inches. Chop the garlic into small pieces.
2.In a pressure cooker, put the octopus, half of the garlic, laurel bay leaf and add water until covered. Cook it under high pressure for about 15 minutes.
3.In another pot, cook the potatoes in salted water for about 20 minutes.
4.Heat the olive oil together with the rest of the garlic.
5.When the octopus is cooked, strain the liquid and add the octopus to the olive oil.
6.Cut the potatoes into small pieces and add them to the octopus and oil.
7.Add vinegar, salt, and pepper. Mix everything carefully.
8.Garnish with some chopped parsley.
