Ingredients

1 tablespoon butter
2 kg chicken breasts
3 -4 celery ribs , roughly chopped
3 small onions , diced
3 carrots , peeled and very roughly chopped
3 garlic cloves ( minced )
1/4 head broccoli
2 heads endive ( roughly chopped )
4 sprigs fresh rosemary
1 bunch fresh thyme
3 tablespoons fresh tarragon ( optional )
1 teaspoon salt
fresh ground pepper
1 tablespoon butter
2 tablespoons flour
chicken stock ( will be self made from this recipe )
Pressure Cooker Chicken Fillets are a great dish to add to your meal prep rotation. Instructions

1.Add the butter into the pressure cooker and set on sauté. Once heated, add in the chicken breasts to brown. Remove from the pot when browned.
2.Add the celery, onions, carrots, garlic, broccoli, endive, rosemary, thyme, tarragon (if using), salt and pepper into the pot. Pour in enough water to cover the chicken and bring to a boil.
3.Return the chicken to the pot, lock the lid into place and cook on high pressure for 10 minutes.
4.Quick release the pressure and carefully remove the chicken breasts from the pot. Shred the chicken and set aside.
5.Melt the remaining butter in a saucepan and add in the flour to form a roux. Gradually stir in the chicken stock until a smooth sauce is formed.
6.Add the shredded chicken back into the pressure cooker and pour the sauce over the top. Stir to combine.
7.Serve as desired.
