Ingredients

1 -2 lb stew beef chunk ( depending on your taste )
1 small onion , chopped
1 teaspoon nutmeg
1 -2 garlic clove , minced
1 tablespoon oil
1 tablespoon Dijon mustard ( I use dry mustard powder if I do n't have Dijon on hand- any will work )
fresh ground pepper
1 1/2 teaspoons beef bouillon
1 can mushrooms ( sliced , undrained )
1 cup water
1/2 teaspoon salt
1 container sour cream
1/4 cup water
2 tablespoons cornstarch
cooked noodles
Pressure Cooker Beef Stroganoff is a classic comfort food that never fails to satisfy. Tender chunks of beef are cooked in a savory mushroom and sour cream sauce, resulting in a rich and hearty stew-like dish that is perfect for a cozy weeknight dinner. Although traditionally served over egg noodles, this recipe can be enjoyed with any type of pasta or starch, making it a versatile addition to your meal rotation.

Instructions

1.In a bowl, season beef with nutmeg, garlic, and pepper.
2.Set 6-quart pressure cooker to sauté mode.
3.When hot, add oil and onions, and cook until onions are soft.
4.Add beef, Dijon mustard, and beef bouillon. Stir well.
5.Add mushrooms with their liquid, and water. Stir well.
6.Close and lock lid. Cook on high pressure for 20 minutes.
7.Release pressure naturally for 10 minutes, then quick release any remaining pressure.
8.In a small bowl, whisk together cornstarch and water until smooth.
9.Turn the pressure cooker back to sauté mode and add the cornstarch mixture. Stir well until the sauce thickens.
10.Remove from heat and stir in sour cream.
11.Serve beef stroganoff over cooked noodles.

CONS

May not be suitable for those with lactose intolerance or dairy allergies, and may require additional time for preparation if using a slow cooker instead of a pressure cooker.
