Instructions

1.Preheat the oven to 350°F. Grease two 8-inch cake pans and set aside.
2.In a mixing bowl, whisk together the flour, baking powder, cinnamon, nutmeg, baking soda, and salt.
3.In a separate mixing bowl, mix together the buttermilk and vanilla extract.
4.Using an electric mixer, cream the sugar and butter together in a bowl until light and fluffy. Beat in the egg and egg whites, one at a time, until well combined.
5.Add half of the dry ingredients to the wet ingredients and mix until just combined. Then, add half of the buttermilk mixture until combined. Repeat the process with the remaining ingredients.

8.Drop spoonfuls of the remaining 1/2 cup of blackberry jam over the tops of the cakes. With a knife, swirl the jam into the batter.
9.Bake the cakes for 25-30 minutes, or until they are golden brown and spring back when touched.
10.Let the cakes cool in the pans for 5 minutes before removing them and transferring them to a wire rack to cool completely. Serve and enjoy!
