Ingredients

1 cup water
3/4 cup caster sugar
1 star anise
1 vanilla bean , split lengthways
orange rind
700 fresh cherries , pitted
1 cup port wine

Instructions

1.In a medium-sized saucepan, stir together the water, caster sugar, star anise, vanilla bean and orange rind over low heat until the sugar dissolves.
2.Increase the heat and bring the mixture to boil. Reduce heat to low, and let it simmer for around 5 minutes, stirring occasionally until the syrup thickens.
3.Add the pitted cherries to the syrup and bring it to boil again. Reduce heat to low and let it simmer for around 10 minutes or until the cherries are tender but still firm.
4.Pour the port wine into the saucepan and allow it to simmer for around two minutes or until it has heated through.
5.Remove from heat and discard the star anise and vanilla bean.
6.Allow the mixture to cool for around 10 minutes.
7.Transfer it to a jar and let it cool completely before storing it in the refrigerator.
