Ingredients

15 large elderberry flowers , shaken to get rid of dust and insects and fertiliser free ( umbels , heads )
900 g white sugar
1 lemon , wiped clean and thinly sliced
40 g citric acid
500 ml boiling water

Instructions

1.Shake the elderflower flowers gently in case there are insects or dust.

5.Add the elderflower flowers to the bowl and stir gently.
6.Leave the mixture to steep for 24-48 hours in a cool, dark place, stirring occasionally.

8.Bottle the cordial and store it in the fridge for up to six months.
