Ingredients

1 kg king prawns , peeled but heads and tails left on
2 tablespoons virgin olive oil
1 red onion , diced
1 tablespoon garlic , finely chopped , divided for use
1/2 cup white wine , divided for use
500 g tomatoes , peeled and chopped
1 teaspoon salt
1 teaspoon white pepper
1 teaspoon paprika
1 tablespoon cumin powder
olive oil , extra drizzle
2 sprigs thyme leaves
1/2 bunch parsley , finely chopped
2 red chilies or 2 green chilies , hot ones finely chopped
pepper , extra for seasoning prawns
1/2 bunch coriander , chopped

Instructions

1.In a large saucepan, heat virgin olive oil over medium heat.
2.Add diced red onions and sauté for 1-2 minutes or until they turn translucent.
3.Add half the chopped garlic, salt, white pepper, paprika and cumin powder and stir for another 1- 2 minutes.
4.Pour half of the white wine and let it reduce for 1 minute before adding in the chopped tomatoes, thyme leaves, and parsley.
5.Cook for 10 minutes over low heat before adding the remaining white wine.
6.Stir in the hot chili peppers and coriander before adjusting seasoning according to taste.
7.Meanwhile, in a separate frying pan, heat up some extra olive oil.
8.Add remaining garlic to the pan.
9.Season the prawns with salt and pepper.
10.Add the prawns to the pan and cook until they turn pink and are no longer translucent.
11.Serve the cooked prawns with the rougaille sauce.
12.Garnish with extra coriander leaves if desired.
