Ingredients

2 eggs
1 shallot ( red , sliced )
1 garlic clove ( minced )
1 teaspoon ginger ( grated )
10 prawns ( large peeled , deveined and roughly chopped )
2 -3 teaspoons fish sauce
1/2 cup plain flour ( all purpose )
1 egg ( beaten )
1 cup panko breadcrumbs ( breadcrumbs )
1 tablespoon peanut oil
4 red shallots ( sliced )
1 garlic clove ( minced )
2 red chilies ( long finely chopped )
2 teaspoons ginger ( grated )
1 tablespoon fish sauce
1 tablespoon ketjap manis
2 tablespoons sugar ( palm or brown )
1/2 cup desiccated coconut
1/3 coriander ( roughly chopped )
Scotch eggs are a popular British picnic food or snack, where a boiled egg is coated in sausage meat and breadcrumbs before being deep-fried. However, this recipe presents an alternative way to make Scotch eggs by using ground prawn meat. The combination of soft-boiled egg and a crispy golden layer of prawn mixture give this dish a unique texture and flavor. To spice it up, a homemade sambal made with coconut, chilies and ginger is served on the side, adding more depth to the dish. This twist on the classic is a perfect dinner option as it is nutritious and flavorful.

Instructions

1.Boil eggs for 7 minutes until soft-boiled, cool under running water and gently remove shells.
2.In a frying pan, heat oil and sauté sliced shallot, garlic and grated ginger until softened.
3.In a food processor, blitz the chopped prawns, fish sauce and the sautéed shallot, garlic and ginger mixture until it forms a paste.
4.Flour your hands, divide the prawn mix into 2 then wrap each egg in the mixture and mould into a ball.
5.Dip each ball into flour, then beaten egg and finally, coat in breadcrumbs.
6.Put the balls on a baking tray and chill for 10-15 mins.
7.Heat a pan with peanut oil until hot, then fry each ball for 5-6 mins, turning occasionally until the crust is golden brown and crispy all over.
8.For the sambal, mix the shallots, garlic, chili, ginger, fish sauce, ketjap manis, sugar and coconut in a small bowl.
9.Garnish the Prawn Scotch Eggs with chopped coriander then serve alongside the sambal.
