Ingredients

1 tablespoon olive oil
1 red onion , halved and thinly sliced
3 cloves garlic , thinly sliced
2 tablespoons tomato paste
1/2 cup white wine
1 1/2 pounds prawns , peeled and deveined , tail on
1/2 cup crumbled Greek feta cheese
2 tablespoons chopped fresh flat-leaf parsley
Originating from Greece; Prawn Saganaki is a popular Mediterranean dish made with delicious prawns and tangy tomato sauce. Instructions

1.Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
2.Stir in the tomato paste and cook for another minute.
3.Add the white wine and bring to a simmer. Let simmer for 5-7 minutes or until the liquid has reduced by half.
4.Add the prawns to the skillet and cook for 2-3 minutes per side, or until they are just cooked through.
5.Sprinkle the feta cheese over the top of the prawns and transfer the skillet to the oven.
6.Broil for 3-5 minutes, or until the cheese is melted and bubbly.
7.Sprinkle with fresh parsley and serve.
