1 fresh pineapple , peeled , cored , and sliced into 3/4 inch thick wedges

Instructions

1.In a large bowl, whisk together lime juice, sherry, olive oil, honey, cilantro, garlic, ginger, Dijon mustard and red pepper flakes.
2.Add in peeled and deveined raw prawns and stir to coat.
3.Cover the bowl with plastic wrap and chill in the refrigerator for 30 minutes to an hour.
4.Preheat grill to medium-high heat.
5.Remove the prawns from the marinade, shaking off any excess, and assemble the skewers along with red onion, red bell pepper, and pineapple.
6.Brush the vegetables and pineapple lightly with olive oil.
