Ingredients

1 kg large shrimp
1 shallot , finely sliced
1 garlic clove , finely sliced
1 lemon , juice of
8 ounces rose wine
1 tablespoon paprika
1/3 teaspoon cumin
1/3 teaspoon fennel seed , crushed

1 large mango , very ripe , peeled and cut into small pieces
1 cup brown sugar
1/2 teaspoon cardamom seed , ground
1/2 teaspoon curry powder
1 lemon , juice of
1/2 kg yogurt

1 tablespoon ground ginger
1 small cucumber

Instructions

1.In a mixing bowl, toss the prawns, shallot, garlic, lemon juice, rose wine, paprika, cumin, fennel seed, olive oil, salt and pepper together. Refrigerate for about 15 minutes.
2.In a saucepan on medium heat, cook the mango, brown sugar, cardamom seed, curry powder and lemon juice until it thickens up to form a marmalade.
3.In another mixing bowl, whisk the ginger, cucumber, yogurt, olive oil and salt together to form the tzatziki sauce.
4.Preheat a grill pan to high heat. Thread the prawns onto skewers and grill each side for about 3 minutes.
5.Warm the pita, layer with the prawns, mango marmalade and drizzle the tzatziki sauce on top. Serve immediately.
