Ingredients

1 lb of large tiger shrimp or 1 lb prawns , peeled
6 cloves garlic , chopped
2 tablespoons red wine vinegar
1 lemon , juice of
12 roma tomatoes
1/4 cup olive oil
1 green bell pepper , chopped
1 yellow bell pepper , chopped
1 cucumber , peeled , seeds removed , chopped
1 bunch green onion , chopped
3 jalapenos , seeds removed and minced
1 bunch fresh cilantro , chopped , reserving some for garnish
1 lemon , cut into wedges for garnish
Originating from Andalusia in Spain, this refreshing cold soup has quickly become a popular dish worldwide. The prawn gazpacho is perfect for hot summer days, and it's a great way to incorporate fresh vegetables into your diet. Made primarily with tomatoes, peppers, cucumber, and onions, this soup packs a nutritional punch and is loaded with vitamins and minerals. Instructions

1.In a large pot of boiling water, blanch the tomatoes for 30 seconds and then transfer them to an ice bath to cool.
2.Peel the skins off the tomatoes and chop them into rough pieces.
3.In a blender, puree the tomatoes until smooth.
4.Add in the garlic, red wine vinegar, lemon juice, and olive oil, and blend until well combined.
5.Add in the green and yellow bell peppers, cucumber, green onion, jalapenos, and cilantro, and pulse until the vegetables are finely chopped but still have some texture.
6.Season the gazpacho with salt and pepper to taste.
7.Chill the gazpacho in the fridge for at least an hour before serving.
8.In the meantime, cook the prawns by bringing a pot of salted water to a boil and poaching the prawns for approximately 3 minutes until cooked through.
