Ingredients

8 -10 medium uncooked prawns , peeled and deveined
2 spring onions , finely sliced
1 long red chile , finely chopped
1 tablespoon coriander leaves , roughly chopped
1/2 cup plain flour
1/4 cup cornflour
2 medium eggs , beaten
1/2 cup corn kernel
vegetable oil ( for cooking )
150 g creme fraiche or 150 g sour cream
smoked salmon , to serve
1 lime , quartered

Instructions

7.Cook until the bottom of the pancake is golden brown and the edges start to curl.
8.Flip the pancake and cook the other side until golden brown.
9.Repeat with the remaining batter to make more pancakes.
10.Serve hot with a dollop of creme fraiche or sour cream, smoked salmon and a squeeze of lime on top.
