Ingredients

100 g couscous
olive oil , for frying
200 ml chicken stock , fresh
1 small onion , sliced
2 garlic cloves , crushed
1 teaspoon ground cumin
400 g chopped tomatoes
1 -2 teaspoon harissa
150 g raw peeled prawns
1 small bunch coriander leaves
Prawn and Harissa Stew with Couscous is a classic North African dish and is famous for its bold flavors and delightful aroma. Instructions

1.Place couscous in a large bowl and pour boiling chicken stock over it. Cover with cling film and let sit for 5 minutes. Fluff with a fork.
2.In a large saucepan, heat the olive oil and then add onions and garlic. Cook for 2 minutes until onions start to become translucent.
3.Add harissa and cumin and stir for 30 seconds.
4.Pour tomatoes in the saucepan and bring it to a boil. Reduce the heat and let simmer for 10 minutes.
5.Add prawns and cook for 2-3 minutes until they become pink.
6.Take the pan off the heat and stir in coriander. Serve the stew with couscous.
