Ingredients

2 1/2 cups breadcrumbs , coarsely chopped
1/2 cup coconut milk
500 g raw prawns
2 tablespoons fresh ginger , finely chopped
1/2 cup coriander leaves , chopped
1 egg
1 tablespoon fish sauce
vegetable oil ( for deep frying )
1/2 cup sweet chili sauce
Prawn and Ginger Fritters are a delicious type of fritter originating from South Asia. Instructions

1.In a food processor, combine 2 cups of breadcrumbs, coconut milk, prawns, ginger, coriander, egg and fish sauce. Blend the mixture until smooth.
2.Transfer the mixture into a bowl and add additional 1/2 cup of breadcrumbs, mix well.
3.Roll the mixture into small balls, and place on a baking sheet lined with baking paper. Leave the balls for 15-20 minutes to set.
4.In a deep fryer or a pot, heat enough vegetable oil to deep fry the balls over medium heat (170°C).
5.Dip each ball in the remaining breadcrumbs and place in the oil. Deep-fry the fritters until golden brown.
6.Remove the fritters from the oil with a slotted spoon and place it on paper towels to drain excess oil.
7.Serve hot with sweet chili sauce.
