Ingredients

1 calamari , tube cleaned make sure the tube is n't too thick and aim for one that has consistent thickness ( note I recently used 6 baby calamari instead of 1 big tube and that worked really well )
1/2 cup minced prawns
1/2 cup minced chicken
1 garlic clove , finely chopped
1 teaspoon fish sauce ( optional )
frypowder ( available from Asian groceries )
1/4 cup oil , enough to shallow fry
1/2 red capsicum , finely diced
1 garlic clove , finely chopped
2 tablespoons fish sauce
2 tablespoons vinegar
6 tablespoons sugar
2 fresh chili peppers , finely sliced to taste
1/4 cup coriander leaves ( to garnish )
Prawn and chicken stuffed calamari - Thai style is a unique and creative dish that combines two protein-rich ingredients to create a flavorful and filling meal. Instructions

1.Season the minced prawns and chicken with garlic, fish sauce (optional), and fry powder. Mix well.
2.Stuff the calamari tube with the prawn and chicken mixture. Do not overstuff.
3.Heat the oil in a frying pan. Shallow fry the stuffed calamari until golden brown. Set aside.
4.In the same pan, add the red capsicum and garlic. Stir-fry for 1-2 minutes.
5.In a small bowl, mix together fish sauce, vinegar, sugar, and chili peppers until sugar dissolves.
6.Pour the fish sauce mixture into the pan. Cook until the sauce thickens and becomes shiny.
7.Plate the fried stuffed calamari, pour the thickened sauce over it, and garnish with sliced chilies and coriander leaves.
