Ingredients

1 cup rolled oats , divided
2 cups mashed potatoes ( preferably without butter or milk )
1/2 cup all-purpose flour
1/2 teaspoon salt
1/2 cup butter , melted

Instructions

1.Preheat oven to 375°F (190°C).
2.Toast oats in a skillet over medium heat until light brown, about 5 minutes. Set aside to cool.
3.Combine mashed potatoes, flour, salt, 1/2 cup rolled oats, and melted butter in a bowl. Mix well.
4.Roll dough on a floured surface to about 1/8 inch thick. Cut biscuits with a biscuit cutter or any cookie cutter of your choice picking out the scraps and re-rolling for more biscuits.
5.Place biscuits on a sheet pan and bake for 12-15 minutes until golden brown. Cool before serving.
