1 chicken breast , in bite size pieces
2 lbs fresh corn kernels
4 poblano chiles , skinned , deveined and chopped
1 cup cilantro , chopped
1/2 onion , chopped
3 sprigs fresh epazote ( herb )
salt
1 onion , finely chopped
4 serrano chilies , finely chopped ( optional )
lime , quartered

Instructions

1.In a large pot, boil the pork and chicken in enough water to cover until tender.
2.Drain the meat and reserve 6 cups of the broth.
3.In the same pot, add the corn, chopped poblanos, cilantro, chopped onion, epazote, and salt to taste.
4.Pour in the reserved broth and bring to a boil. Reduce heat and let simmer for 30 minutes.
5.Add the serrano chilies (if using) and let simmer for an additional 10 minutes.
6.Serve with a squeeze of lime and enjoy!
