Ingredients

12 -16 dried cascabel chiles
1 tablespoon oil
1 package nixtamal ( canned hominy may be substituted if nixtamal is unavailable )
6 quarts water
3 medium onions , divided
1 head garlic , cloves separated and peeled
3 lbs plum tomatoes
3 lbs pork , for pozole or 3 lbs pork stew meat
3 tablespoons salt ( or to taste )
1 head iceberg lettuce , shredded
1 bunch radish , trimmed and sliced
1/3 - 1/2 cup dried oregano
ground dried chile , piquin or other hot chili pepper , crushed
10 -12 limes , cut into wedges
1 package whole crisp corn tortillas ( used for tostadas )

Instructions

1.Toast the dried cascabel chiles in a dry skillet until fragrant, then remove from heat and allow to cool.

3.Add the water to the pot, along with 1 onion that has been quartered, 3 garlic cloves, and the toasted cascabel chiles. Bring to a boil and then reduce heat to a gentle simmer for about 2 hours.
4.While the broth is simmering, roast the tomatoes and remaining onion under the broiler until charred on all sides. Blend the tomatoes, onion, and remaining garlic cloves until smooth and set aside.
5.Once the broth has simmered for 2 hours, add the pork and salt. Continue to simmer for another 2-3 hours, or until the pork is tender.
6.Serve the pozole hot in bowls, garnished with shredded iceberg lettuce, sliced radishes, dried oregano, and crushed hot chili pepper. Squeeze lime wedges over the pozole to taste and serve with whole crisp corn tortillas.
