Ingredients

1 tablespoon granulated sugar
1 cup warm water , 250 ml
2 teaspoons active dry yeast , 10 ml
1 cup navy beans , cooked or 1 cup navy beans , canned , drained and rinsed , 250 ml
2 tablespoons vegetable oil , 25 ml
2 1/4 cups all-purpose flour , approx . 550 ml
1 cup whole wheat flour , 250 ml
1 1/2 teaspoons salt
1 tablespoon cornmeal
2 tablespoons olive oil
salt and pepper

Instructions

1.In a small bowl, dissolve sugar in warm water and sprinkle yeast on top. Let sit for 10 minutes until frothy.
2.In a food processor, pulse beans with vegetable oil until smooth.
3.In a large mixing bowl, combine all-purpose flour, whole wheat flour, and salt. Add the yeast mixture and bean puree, stirring until a sticky dough forms.
4.Knead the dough on a floured surface for 5-10 minutes until smooth and elastic.
5.Place the dough in a greased bowl, cover with a damp cloth, and let rise for 1 hour until doubled in size.
6.Preheat oven to 375°F and sprinkle cornmeal on a baking sheet. Punch down the dough and shape into a round or oblong shape. Brush with olive oil and sprinkle with salt and pepper.
7.Bake for 30-35 minutes, until golden brown and the bread sounds hollow when tapped on the bottom.
8.Cool on a wire rack before slicing.
