1 lb ripe tomatoes
2 lbs baby octopus
1/4 cup olive oil
1 large brown onion , chopped
2 garlic cloves
1 1/3 cups dry white wine
1/4 teaspoon saffron thread
2 sprigs fresh thyme
2 tablespoons flat leaf parsley , rough chopped

Instructions

1.Preheat your oven to 325°F. Quarter the tomatoes and place them in a food processor. Pulse until smooth, then set aside.

3.In a large Dutch oven over medium heat, add the olive oil and brown onion. Sweat for 5-7 minutes, or until translucent. Add garlic and cook for an additional 2-3 minutes.
4.Pour in the white wine, saffron thread, fresh thyme, and tomato puree. Bring to a boil, reduce heat and simmer for 20 minutes or until the sauce has thickened.
5.Add the baby octopus to the Dutch oven, cover with a lid, and place in the oven. Bake for 1.5 hours or until fork-tender.
6.Garnish with rough chopped parsley, and serve with a crusty baguette or your favorite roasted vegetables.
