Ingredients

800 g chicken breasts , skinned and boned
1 vegetable stock cube ( court-bouillon cube )
1 liter water
250 ml white wine ( optional )
150 g fresh goat 's cheese ( NO rind )
fresh thyme
1 -2 garlic clove , peeled and crushed
fresh ground black pepper , to taste
salt , to taste
4 canned artichoke hearts , diced
80 g almonds , slivered and toasted
2 tablespoons pumpkin oil or 2 tablespoons olive oil
Poulet Nomade, also known as Nomad's Chicken, is a delicious and unique dish that is perfect for a light lunch or dinner. This dish features chicken breasts that are poached in a flavorful broth of vegetable stock, white wine, goat's cheese, thyme, garlic, black pepper, and salt. The chicken is then packed into a jar with diced artichoke hearts and toasted almonds, and sealed with a drizzle of pumpkin oil or olive oil. Instructions

1.Cut the chicken into thin strips and set aside.
2.In a large pot, dissolve the vegetable stock cube in water and bring to a boil.
3.Reduce the heat to a simmer and add the chicken strips, white wine (if using), fresh goat's cheese, thyme, garlic, black pepper, and salt.
4.Simmer for 10-12 minutes, stirring occasionally, until the chicken is cooked through.
5.Remove the chicken from the pot and set aside to cool.
6.Once the chicken has cooled, layer the diced artichoke hearts and toasted almonds in the bottom of a jar.
7.Add the chicken on top, and then pour the poaching liquid over the chicken until it is fully immersed.
8.Drizzle pumpkin oil or olive oil over the top of the chicken.
9.Seal the jar and refrigerate for at least 2 hours, or until chilled.
10.To serve, remove the chicken from the jar and place in a bowl or on a plate. Enjoy!
