3 1/2 - 4 lbs chicken , cut into 8 pieces
4 tablespoons unsalted butter
2 medium onions , chopped
1/3 cup all-purpose flour
2 shallots , minced
2 garlic cloves , chopped

1/2 teaspoon salt

3/4 cup green olives , pitted
3/4 cup black olives , pitted if desired

1 can peeled Italian tomatoes , drained
parsley , chopped ( for garnish )

1 celery rib , halved ( tied with white kitchen string )

Instructions
