1 lb shin beef
2 lbs beef , shin bone or 2 lbs knuckle veal
1 teaspoon salt
1/2 teaspoon allspice berry
1/2 mace blade
1/2 teaspoon black peppercorns
1 bay leaf

Instructions

1.Wash the meat pieces and put them in a pot.
2.Add water until the meat is covered by 2-3 cm.

5.Cook on low for 4-5 hours or until the meat is falling off the bone.
6.Take the meat out and strain the broth.
7.Remove any fat from the broth.
8.Put the meat back into the broth.
9.Bring to a simmer and reduce to half, stirring occasionally.
10.Remove from heat and let the mixture cool.
11.Put the mixture into small ramekins or pots.
12.Cover with a layer of melted butter.
13.Chill in the refrigerator until the butter has hardened.
14.To serve, remove from the refrigerator and let the pots come to room temperature.
