Ingredients

2 lbs medium potatoes , such as purple Peruvian ( about 8 ) or 2 lbs yukon gold potatoes ( about 8 )
1/2 teaspoon chopped garlic
1/4 lb queso fresco ( scant 1 cup ) or 1/4 lb feta , crumbled ( scant 1 cup )
1/2 cup whole milk
1 tablespoon chopped onion
1 tablespoon olive oil
1 tablespoon crema ( aji amarillo or aji mirasol paste )

Instructions

1.Peel and quarter the potatoes.

4.Add salt and pepper to taste and blend until smooth and creamy. If the sauce is too thick, add more milk to thin it out.
5.Once the potatoes are cooked, drain them and allow them to cool for a few minutes.
6.Arrange the potatoes on a plate and pour the cheese sauce over them.
7.Garnish with black olives, sliced boiled eggs, and slices of lettuce.
8.Serve at room temperature or chilled.
