Potatoes in Thick Yogurt Gravy, also known as Dum Aloo, is a popular North Indian dish that combines a blend of spices with potatoes in a creamy and tangy yogurt gravy. Traditionally it's made by deep frying potatoes before adding them into the gravy, but in this recipe, the potatoes are quartered and cooked directly in the gravy, making it a healthier version. This dish can be served as a main course or a side-dish, perfect for any occasion. It's also a great option for vegetarians and those on a gluten-free diet as Besan flour is gluten-free.

Instructions

1.In a small bowl, whisk together the curds and besan flour to form a smooth paste.
2.Heat oil in a pan and add cumin seeds, curry leaves and green chili paste. Stir fry until fragrant.
3.Add chopped tomato and cook until softened. Then add red chili powder, coriander powder, coarsely ground peanuts, sugar, and salt. Cook for 2-3 minutes.
4.Add quartered potatoes and stir well. Cover and cook on medium low heat for 15-20 minutes, or until potatoes are tender.
5.Add the curds and besan mixture and stir well. Ensure it is mixed well with the potatoes.
6.Cook for another 5-7 minutes, until the gravy becomes thick.
7.Serve hot with steamed rice or chapati.
