Ingredients

1 large potato , peeled and grated
2 medium zucchini , grated ( DO NOT PEEL )
1/4 cup onion , chopped small
1/4 cup yellow cornmeal
2 tablespoons chopped fresh parsley
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons grated parmigiano-reggiano cheese
3 large eggs , slightly beaten
2 tablespoons butter
2 tablespoons olive oil
Potato Zucchini Fritters are a perfect appetizer for a party or a delicious snack that can be enjoyed anytime. Made with grated potato, grated zucchini, and cornmeal, these fritters are crispy on the outside and soft on the inside. The addition of chopped onions, fresh parsley and grated parmigiano-reggiano cheese enhances the flavor of the fritters. What's more, they are gluten-free and low-fat, making them a healthier snack option.

Instructions

1.In a large bowl, combine grated potato, grated zucchini, chopped onion, cornmeal, chopped parsley, salt, black pepper and grated parmigiano-reggiano cheese. Mix well.
2.Add eggs and mix again until the mixture is well coated.
3.In a large skillet, melt butter and olive oil over medium heat.
4.Drop spoonfuls of the potato zucchini mixture into the skillet and flatten each fritter slightly using the back of a spatula. Cook for 3-4 minutes until the fritters are golden brown. Flip the fritters and cook for another 2-3 minutes until the other side is golden brown.
5.Once done, transfer the fritters to a paper towel-lined plate to remove excess oil. Serve hot with your favorite dipping sauce.
