Sauce :
1/2 cup sour cream

4 russet potatoes , peeled and chopped
8 poblano peppers
8 slices bacon

Instructions

1.Preheat the oven to 400°F.

6.Stuff the potato mixture into the poblano pepper halves.
7.Bake for 20-25 minutes, or until the potatoes are golden and the peppers are soft.
