2 tablespoons olive oil
1/4 teaspoon salt
24 medium shrimp
1/4 cup lime juice
1/4 teaspoon cayenne pepper
1/2 cup cilantro , chopped
1/3 cup red onion , thinly sliced
1/3 cup carrot , matchstick or shredded
2 1/2 ounces fresh spinach leaves
8 round rice paper sheets
1/4 cup cilantro , chopped
1/4 cup mirin
2 tablespoons soy sauce
1/2 creamy peanut butter
1/4 cup lime juice
Potato Shrimp Summer Rolls are a fresh, healthy twist on traditional summer rolls. The crispy hash brown potatoes, succulent shrimp, and fresh vegetables are wrapped in delicate rice paper, making for a light and refreshing appetizer. Instructions

1.Preheat oven to 400 degrees Fahrenheit. In a mixing bowl, toss Simply Potatoes & reg ; Shredded Hash Browns with olive oil and salt.
2.Spread the potatoes in a thin layer on a baking pan and bake for 15-20 minutes or until golden brown. Remove from oven and let cool.
3.In a medium mixing bowl, combine cooked potatoes, shrimp, lime juice, cayenne pepper, cilantro, red onion, carrot, and spinach leaves.
4.Fill a large bowl with warm water. Working with one rice paper sheet at a time, submerge the sheet in water for 10-15 seconds until softened.
5.Remove from the water and lay flat on a clean work surface. In the center of the rice paper sheet, add a line of filling. Fold both sides of the rice paper sheet over the filling and roll tightly until sealed.
6.In a mixing bowl, whisk together cilantro, mirin, soy sauce, peanut butter, and lime juice to make the dipping sauce.
7.Serve the rolls with the dipping sauce on the side.
