Ingredients

2 poblano chiles
1 tablespoon canola oil
2 cups white potatoes , diced
1 cup onion , chopped
1 cup corn kernel
1/8 teaspoon ground red pepper
5 garlic cloves , minced
3 ounces chorizo sausage , casings removed
3/4 cup unsalted chicken stock
3/8 teaspoon kosher salt
8 corn tortillas
1/4 cup green onion , sliced
1 ounce manchego cheese , shredded ( about 1/4 cup )

Instructions

1.Preheat the oven to 375°F.

10.Place the tortillas on a baking sheet and bake for 4 minutes or until they are warm and have slightly crisped.
11.Slice the roasted poblano chiles, removing the seeds and stems and discarding them.
12.Fill each tortilla with some of the potato-chorizo mixture and top with roasted poblano chiles, green onions, and shredded manchego cheese.
13.Serve the tacos with lime wedges on the side.
