Ingredients

3 potatoes , peeled and diced
2 cups frozen peas
1 tablespoon vegetable oil
1 onion , finely chopped
4 garlic cloves , crushed
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon ground turmeric
1 teaspoon chili powder
1/2 teaspoon black pepper
1/2 teaspoon cinnamon
1/2 teaspoon ground cardamom
1/2 teaspoon ground coriander
1/2 teaspoon ground ginger
12 sheets phyllo pastry
butter , melted ( I suggest Earth Balance )
oil , for frying

Instructions

1.Preheat the oven to 400 degrees Fahrenheit.

4.Add the boiled potatoes, frozen peas, and all spices. Mix well and cook for 5-7 minutes until the mixture is heated through.
5.Lay out one sheet of the phyllo pastry and brush it with melted butter. Place another sheet of pastry on top and repeat until you have a stack of 4 sheets.
6.Cut the layered pastry into 4 equal-sized rectangles.
7.Spoon 1-2 tablespoons of the potato and pea mixture onto one end of each rectangle.
8.Fold the end with the mixture over diagonally and continue folding until the pastry is completely wrapped around the filling in a triangular shape.
9.Repeat with the remaining pastry and fillings.
10.Heat oil in a deep-frying pan over medium-high heat until hot. Fry the samosas in batches for 2-3 minutes until golden brown, then transfer them to a paper towel-lined plate to drain excess oil.
11.Serve immediately with your favorite dipping sauce.
