Ingredients

4 large potatoes
30 g margarine ( or ghee )
1 cup cheddar cheese , grated
plain flour
2 eggs , lightly beaten
packaged breadcrumbs
oil ( for frying )
1 carrot , peeled and finely chopped
1 zucchini , finely chopped
1 small red pepper , finely chopped
1 small green pepper , finely chopped
1 small onion , finely chopped
1 stalk celery , finely chopped
30 g margarine
1 garlic clove , crushed
1 small red fresh chili pepper , finely chopped
2 teaspoons yellow mustard seeds
2 teaspoons coriander seeds
1/4 cup water
2 teaspoons plain flour
2/3 cup chutney

Instructions

1.Boil potatoes and mash them properly.
2.Add grated cheese to the mixture and keep it aside.

5.Add the yellow mustard seeds, coriander seeds and fresh chili pepper to the skillet.
6.Cook for 2 minutes and then add the chutney and water to the skillet.
7.Cook for 5 minutes and then add plain flour to the mixture and stir until it thickens and forms into a paste.
8.Remove from heat and keep it aside to cool.
9.Divide the potato mixture into equal portions and shape them into small patties.
10.With your thumb, create a depression in each potato patty and fill it with the vegetable and chutney filling.
11.Pinch the sides of the patty to seal the filling inside.
12.Dip the patties in beaten eggs and then coat with breadcrumbs.
13.Heat oil in a kadhai or frying pan and deep fry the patties in hot oil for 5 to 6 minutes until they turn golden brown in color.
