Ingredients

4 large eggs
1 large egg , for egg wash
1/2 cup melted unsalted butter or 1/2 cup margarine , cooled
1/2 cup sour cream
1 teaspoon salt
5 cups all-purpose flour
flour , for dusting
1 lb potato , peeled and cubed
4 tablespoons unsalted butter
2 large onions , finely chopped
15 ounces button mushrooms , finely chopped
3/4 cup shredded cheddar cheese
4 sprigs fresh thyme
kosher salt
freshly ground coarse black pepper
1 cup heavy cream
chopped fresh flat-leaf parsley , garnish
Potato, mushroom, onion & cheese pierogies are a traditional Polish dish that can be enjoyed as a main course or as a snack. These pierogies are filled with a savory mixture of mashed potatoes, sautéed mushrooms, onions and melted cheese. The dough is soft and tender, while the filling is rich and flavorful. Pierogies can be served boiled, fried or baked. They are perfect as a comfort food on a cold day, and can be paired with sour cream, bacon bits, caramelized onions or your favorite sauce.

Instructions

1.In a bowl, whisk together eggs, melted butter, sour cream and salt
2.Gradually stir in flour until dough forms
3.Knead the dough on floured surface until smooth
4.Cover and let it rest for 30 minutes
5.Meanwhile, cook potatoes in boiling salted water until tender
6.Drain and mash with 4 tablespoons of butter
7.In a skillet, cook onions until softened
8.Add mushrooms and cook until browned
9.Mix in mashed potatoes, cheese, thyme, salt and pepper
10.Roll out dough and cut circles using a cookie cutter
11.Place a spoonful of filling in the center of each circle
12.Fold dough over filling and press edges to seal
13.Bring a pot of salted water to boil and cook pierogies in batches for 3-4 minutes or until they float to the surface
14.Drain and serve with heavy cream and parsley
