Instructions

5.Add olive oil and the reserved potato mixture to the skillet; cook, stirring occasionally, until the potatoes are tender, for about 10 minutes.
6.Stir in cooked chorizo.
7.Warm tortillas according to package instructions and divide potato mixture among them.
8.Top each with queso fresco and roll up tightly.
